Mango Habanero Salsa

Mango Habanero Salsa

    Preheat the oven to 425 degrees F (220 degrees C).

    Arrange the habanero pepper, mango, and onion on a baking sheet. Drizzle with olive oil and toss to coat evenly.

    Roast on the middle rack of the preheated oven for 10 minutes. Switch the oven to broil and roast for 5 more minutes. Move the baking pan to the top shelf and broil until the onion and mango start to brown and the habanero pepper blisters, about 3 more minutes. Remove and let cool slightly.

    Wearing gloves, remove the stem from the habanero pepper and place the pepper in a small food processor or blender; add the mango, the onion, the garlic, the cilantro, the lime juice, and the salt. Season with black pepper and cumin. Pulse until the salsa is combined and slightly chunky. Refrigerate for 2 hours before serving to let the flavors blend.
