Charred Pineapple and Mango Salsa

Charred pineapple and mango salsa balances smoky edges with juicy sweetness, lifted by bright lime and fresh cilantro. Bits of red bell pepper and jalapeño add gentle heat and crunch, making it special for its contrast of grill-kissed flavors and tropical fruit. Serve it at summer cookouts with chips, tacos, or grilled fish when you want something vibrant and refreshing.

Charred Pineapple and Mango Salsa
  1. 1

Preheat an outdoor grill to medium-high heat, and lightly oil the grate.

  2. 2

Grill the pineapple, red bell pepper, and jalapeño pepper on the preheated grill, turning often, until the pineapple has light grill marks and the peppers are charred on all sides, about 3 minutes for the pineapple and 5 to 7 minutes for the peppers; carefully remove from the grill and place the peppers in a paper bag to cool.

  3. 3

When the peppers are cool, gently rub off the skins with paper towels, cut them in half, and remove and discard the seeds.

  4. 4

Dice the cooled pineapple and peppers into small pieces and place them in a bowl.

  5. 5

Add the mango, red onion, cilantro, lime juice, and lime zest, then stir to combine.

  6. 6

Cover the bowl with plastic wrap and refrigerate for 8 hours to 1 day before serving.
