  1. 1

Position an oven rack 5 to 6 inches from the heat source and preheat the broiler.

  2. 2

Whisk the eggs in a bowl; then whisk in 1 tablespoon Parmesan cheese, cream, basil, oregano, black pepper, and hot sauce.

  3. 3

Heat oil in a skillet over medium-high heat. Add the butter; let it melt and swirl to coat the skillet evenly. Add the oysters; brown them for about 1 minute per side. Reduce the liquid slightly for about 30 seconds more.

  4. 4

Slowly pour the egg mixture over the oysters, keeping the oysters evenly spread in the skillet; cook for 30 seconds. Gently shake the skillet and do not stir. Cook until the bottom and sides of the eggs start to set, about 3 minutes; sprinkle the remaining cheese on top. Move the skillet to the broiler.

  5. 5

Broil until the eggs start to puff at the edges and the top is nicely browned, 5 to 7 minutes. Remove from the broiler; sprinkle with parsley. Cut into wedges and serve right away.
