Homestyle Stuffed Peppers

Homestyle Stuffed Peppers feature tender green bells packed with a savory blend of beef, rice, and breadcrumbs, bathed in a bright tomato and vinegar sauce that balances richness with tang. Parmesan melts into the filling and on top for a salty, nutty finish. It’s nostalgic comfort food perfect for a cozy weeknight dinner or a family-style weekend bake.

Homestyle Stuffed Peppers
  1. 1

Gather all the ingredients. Bring a large pot of water to a boil.

  2. 2

Add the peppers and boil until they soften, 4 to 5 minutes. Transfer the peppers to a colander and run cold water over them to cool.

  3. 3

Combine the ground beef, cooked rice, bread crumbs, 4 tablespoons Parmesan, the onion, the egg, garlic powder, salt, and pepper in a large bowl and mix until well combined.

  4. 4

Preheat the oven to 350 degrees F (175 degrees C). Spoon the beef mixture into the peppers.

  5. 5

Set the peppers in a baking dish with the stuffing facing up.

  6. 6

Stir the tomato sauce and vinegar together in a bowl. Pour the tomato sauce mixture over the peppers.

  7. 7

Sprinkle the remaining 2 tablespoons Parmesan on top.

  8. 8

Bake in the preheated oven, basting the peppers with the sauce several times, until the beef filling is no longer pink in the center, about 1 hour 20 minutes. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C).
