Gather all the ingredients.

Season the chicken with salt and pepper. Heat oil in a 10-inch skillet over medium-high heat. Add half of the chicken to the skillet and cook until browned, about 5 minutes. Using a slotted spoon, remove the chicken from the skillet and set it aside. Repeat with the remaining chicken.

Add the white and pale green parts of the green onions (about 2/3 cup) and the garlic to the skillet. Cook until softened, 1 to 2 minutes.
