Instant Pot Caldillo

Instant Pot Caldillo

    Turn on a multi-functional pressure cooker (such as an Instant Pot) and choose the Sauté setting.

    Heat the oil; sear the beef until the cubes are browned on all sides, 5 to 8 minutes.

    Transfer the beef to a plate and set aside.

    Add the onion to the Pot; cook until soft and translucent, about 5 minutes.

    Turn off the Sauté function.

    Return the beef to the Pot; stir in the beef broth, potatoes, diced tomatoes, green chiles, oregano, garlic, cumin, chipotle chile powder, chili powder, and black pepper.

    Close and lock the lid.

    Select High pressure according to the manufacturer's instructions; set the timer for 45 minutes. Allow 10 to 15 minutes for the pressure to build.

    Release the pressure using the natural-release method according to the manufacturer's instructions, 10 to 40 minutes.
