Kraut Bierocks

Kraut Bierocks are pillowy buns stuffed with a savory mix of ground beef, Italian sausage, cabbage, and melty cheeses, with a tangy hint of mustard. They’re satisfying as a main dish and just as tasty as a hand-held snack, and they reheat beautifully for leftovers. Serve them warm for game day, potlucks, or a cozy family dinner.

  1. 1

To make the sweet dough: In a medium bowl, combine the yeast, sugar, and water and mix; let stand for 10 minutes.

  2. 2

Stir in the flour, dry milk, baking powder, and shortening, then knead the mixture for 10 minutes, adding as little flour as needed.

  3. 3

Cover the bowl with a damp cloth and let it rise in a warm place for 30 minutes, then knead again.

  4. 4

To make the filling: Meanwhile, brown the beef, sausage, and onion in a large skillet over medium-high heat.

  5. 5

Drain the extra fat from the skillet, then stir in the cabbage, mustard, salt, and pepper and cook for 5 minutes.

  6. 6

Add the cheese and cook, stirring, until the cheese is melted.

  7. 7

Preheat the oven to 350 degrees F (175 degrees C).

  8. 8

    Flatten a piece of dough.

  9. 9

Place a large spoonful of the meat filling onto the dough and fold it over to make a round bun.

  10. 10

Lay it folded-side-down in a lightly greased 9x13-inch baking dish.

  11. 11

Repeat with the remaining dough and filling.

  12. 12

Bake in the preheated oven for 20 minutes, or until golden brown.
