Lemon Parmesan Chicken Bites
  1. 1

    Gather all ingredients.

  2. 2

Cut the chicken breasts into bite-sized pieces and season with salt.

  3. 3

Melt 2 tablespoon butter in a 12-inch skillet over medium-high heat. Add the chicken pieces in a single layer, spaced about 1/2-inch apart, and cook until lightly browned, about 3 minutes.

  4. 4

Turn the chicken and cook until the other side is browned and the chicken is cooked through (165 degrees F or 74 degrees C), about 2 minutes. Remove the chicken from the skillet and set aside.

  5. 5

Melt the remaining 1 tablespoon butter in the skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Stir in the lemon juice.

  6. 6

Return the chicken to the skillet and toss to coat.

  7. 7

Remove from the heat. Stir in the Parmesan cheese and lemon zest.

  8. 8

Season with pepper and crushed red pepper, if desired. Serve with lemon wedges. Recipe developed by Barrett Heald.
