Low-Carb Bacon-Wrapped Meatloaf

Low-Carb Bacon-Wrapped Meatloaf pairs juicy beef and pork with minced mushrooms for moisture without the breadcrumbs. A herby tomato sauce and melted mozzarella enrich every slice, while a bacon blanket crisps on top for smoky depth. Ideal for a hearty weeknight dinner or meal prep with leftovers.

Low-Carb Bacon-Wrapped Meatloaf
  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with nonstick spray.

  2. 2

Combine the ground beef, ground pork, mushrooms, onion, mozzarella cheese, egg, garlic, oregano, basil, salt, pepper, and red pepper flakes in a large bowl until evenly mixed. Shape the mixture into a loaf and set it in the center of the prepared baking dish.

  3. 3

Stir together the tomato sauce, ketchup, oregano, basil, garlic powder, salt, and pepper for the sauce in a small bowl; pour it over the meatloaf. Lay the bacon slices on top of the meatloaf.

  4. 4

Bake, uncovered, in the preheated oven until the bacon is cooked and the meatloaf is no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C).
