Bacon-Wrapped Meatloaf with Brown Sugar Glaze

Bacon-Wrapped Meatloaf with Brown Sugar Glaze pairs a juicy mix of beef and pork with a sweet, tangy topping that caramelizes in the oven. Bacon-Wrapped Meatloaf with Brown Sugar Glaze
  1. 1

Preheat the oven to 350 degrees F (175 degrees C) with the rack in the center position. Grease a 9x5-inch loaf pan.

  2. 2

Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on paper towels; keep the drippings in the skillet.

  3. 3

Heat the drippings over medium-high heat. Add the celery; cook, stirring, until soft but not browned, about 5 minutes. Set aside.

  4. 4

In a large bowl, combine the bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and celery; mix well.

  5. 5

Crumble the beef and pork into the bread crumb mixture; mix with your hands, taking care not to overmix. Shape into a loaf; place it in the prepared pan. Lay the bacon strips lengthwise over the top of the loaf.

  6. 6

Bake in the preheated oven for 30 minutes.

  7. 7

Meanwhile, in a small bowl, combine the ketchup, brown sugar, dry mustard, and 1/2 teaspoon Worcestershire sauce; mix well.

  8. 8

Remove the loaf from the oven; drain any fat bubbling on top and around the edges. Bake for 25 minutes more. Drain the fat again; spoon or brush the brown sugar glaze evenly over the top. Increase the oven temperature to 400 degrees F (200 degrees C).

  9. 9

Continue baking until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let rest before cutting and serving, at least 10 minutes.
