    Preheat the oven to 215 degrees F (102 degrees C). Line 2 baking sheets with parchment paper.

    In a glass, metal, or ceramic bowl, beat the egg whites, vanilla extract, and cream of tartar with an electric mixer on high speed until soft peaks form.

    Gradually add the sugar while continuing to beat until stiff peaks form.

    Rub a bit of the mixture between 2 fingers to check that the sugar has fully dissolved; if it still feels gritty, keep beating until smooth.

    Spoon the egg white mixture into a piping bag.

    Add the food coloring by dropping in the 3 colors spaced evenly apart and use a butter knife to push them down along the sides of the bag.
