    Rinse and sort the beans; put them in a large bowl. Cover with cold water; soak the beans for 6 to 8 hours.

    Drain and rinse the beans; transfer them to a slow cooker. Pour 8 cups water into the slow cooker; stir in the onion, garlic powder, bay leaves, black pepper, and onion powder. Set the turkey leg in the slow cooker; cover.

    Cook on Low for 6 hours. Stir in the olive oil, add more water if the beans are starting to dry out; continue cooking until the beans are very tender, 2 hours more.
