Roasted Delicata

Roasted Delicata highlights the squash’s natural sweetness and tender texture, enhanced by a light gloss of olive oil and a simple sprinkle of salt and pepper. The high-heat roast caramelizes the edges and softens the flesh for a cozy fall side that pairs well with roasted meats or hearty grain bowls. Serve warm for weeknight dinners or holiday spreads.

Coat the bottom of a baking dish with a drizzle of olive oil. Season the squash halves with salt and pepper; place them cut-side down in the prepared dish.
