    In a large bowl, mix together the ground beef, bread crumbs, chopped onion, egg, salt, and black pepper until well combined. Form the beef mixture into 4 patties, each about 3/4 inch thick.

    Cook the patties in a large skillet over medium heat until browned on both sides, about 10 minutes. Add the beef broth, onion, and mushrooms; bring to a boil. Lower the heat to low, cover, and simmer until the patties are no longer pink in the center, about 10 minutes more. Move the patties to a platter and keep them warm.

    Bring the onion mixture to a boil. In a small bowl, combine the cornstarch and water; stir this into the onion mixture. Cook and stir until the onion gravy thickens, about 1 minute. Spoon over the patties to serve.
