Shadi's One-Pan Turmeric Chicken with Rice
  1. 1

Put the water, chicken breasts, onion, garlic, turmeric, salt, and pepper into a 4-quart pot.

  2. 2

Bring to a boil over medium-high heat.

  3. 3

Lower the heat to medium, cover, and simmer until the chicken is cooked through, 20 to 25 minutes.

  4. 4

An instant-read thermometer inserted near the bone should show 165 degrees F (74 degrees C).

  5. 5

Remove the chicken from the pot and set it aside.

  6. 6

Rinse the rice in a sieve under running water several times to remove excess starch.

  7. 7

Add the rice and carrot to the broth in the pot.

  8. 8

Bring to a simmer; reduce the heat to medium-low; and simmer, covered, until the rice is tender, about 20 minutes.

  9. 9

Meanwhile, shred the chicken with two forks.

  10. 10

When the rice is done, fluff it with a fork.

  11. 11

Gently stir in the shredded chicken and drizzle with lemon juice.

  12. 12

Taste and add more salt if needed.

  13. 13

    Sprinkle with parsley.
