    Whisk vegetable oil, vinegar, lime juice, cumin, chili powder, and garlic in a bowl; pour the mixture into a resealable plastic bag. Add beef, coat it with the marinade, press out the excess air, and seal the bag. Marinate in the refrigerator for 4 hours or overnight.

    Take the bag with the beef out of the refrigerator; let it come to room temperature, about 20 minutes.

    Preheat the oven to 350 degrees F (175 degrees C).

    Move the beef and marinade to a large baking dish. Add beef stock; cover the dish with aluminum foil.

    Bake in the preheated oven until the beef is very tender, about 2 1/2 hours. Let rest for 10 minutes; shred with 2 forks. Drain and discard about 80% of the liquid from the beef; season with salt.
