    Gather all ingredients.

    In the bottom of a 5-quart slow cooker, stir together the chicken broth and ranch dressing mix until combined. Arrange the chicken breasts in an even layer over the broth mixture, then add an even layer of potatoes. Drizzle with oil and sprinkle with salt and pepper.

    Cover and cook until the chicken is cooked through and the potatoes are fork-tender, about 2 hours and 45 minutes on HIGH or about 3 hours and 45 minutes on LOW.

    Remove the chicken breasts from the slow cooker and transfer them to a cutting board. Let cool slightly for 5 minutes. Coarsely shred the chicken with 2 forks.

    Add the cream cheese, ranch dressing, and 1 1/2 cups of the shredded cheese to the slow cooker. Cover and cook on HIGH until the cheeses begin to melt and the potatoes are fully tender, about 10 minutes. Uncover and stir the cheese mixture until almost fully combined.

    Return the shredded chicken to the slow cooker and stir until evenly coated with the cheese mixture.
