Luncheon Meat Fried Rice

    Warm a large skillet over medium-high heat; add Spam. Cook until lightly browned, 5 to 7 minutes; move to a plate.

    Heat sesame oil in the same skillet until it shimmers, about 1 minute. Add onion; cook, stirring, until slightly softened, about 5 minutes. Lower the heat; add rice and frozen vegetables; cook and stir until heated through, about 5 minutes. Push the rice mixture to the edges of the skillet; pour 4 beaten eggs into the center. Cook and stir until curds form, 3 to 4 minutes.

    Stir ½ Spam into the scrambled eggs, then fold into the rice mixture to combine. Add soy sauce and Sriracha; stir, then take off the heat.

    Crack the remaining 4 eggs into a separate skillet over medium heat. Cook until the outer edges turn opaque, about 1 minute. Cover, reduce heat to low, and cook until the whites are fully set, about 4 minutes; season with salt and black pepper.

    Set the fried eggs on top of the fried rice; add the remaining ½ Spam. Garnish with nori, scallions, and sesame seeds.
