    Combine the butternut squash, potato, onion, and salt in a large bowl; let stand until moisture is released, about 10 minutes. Transfer to a colander and squeeze out the excess liquid.

    Return the squash mixture to a bowl and mix in the flour, egg, black pepper, and baking powder until well combined.

    Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir the spinach until wilted, about 2 minutes. Season the spinach with salt and pepper; transfer to a bowl.

Place 1 teaspoon spinach on the flattened patty and shape the patty around the spinach into a ball. Flatten the ball with your palms. Repeat with the remaining squash mixture and spinach to make 12 to 14 more spinach-filled patties.
