    Split the vanilla bean lengthwise with the tip of a sharp knife. Hold the pod open and scrape the seeds from each half using the flat side of your knife.

    Combine the vanilla bean, the scraped seeds, and olive oil in a small saucepan over very low heat. Warm the oil until fragrant, about 5 minutes, then remove from heat and let it cool for about 5 minutes.

    Use a spiralizer to cut the sweet potato and the apple into noodles. Place them in a large bowl.
