Steak Tips with Mushroom Sauce

Steak Tips with Mushroom Sauce pairs juicy grilled sirloin with a rich, wine-forward pan sauce loaded with buttery portobellos, shallot, garlic, and thyme. The reduction delivers deep, savory flavors with just enough body from a touch of flour—perfect for spooning over the beef and mopping up with crusty bread. Ideal for a weeknight upgrade or a relaxed dinner with friends.

Steak Tips with Mushroom Sauce
  1. 1

Preheat an outdoor grill to medium-high heat.

  2. 2

Melt butter in a large skillet over medium-high heat. Cook the shallot until translucent. Add the mushrooms, cover, and cook until they darken, about 5 minutes.

  3. 3

Remove the mushrooms from the pan and set them aside. Deglaze the pan with 1 can of beef broth and Burgundy. Increase the heat and bring to a boil. Let it boil until reduced by one-third.

  4. 4

Grill the sirloin tips on the preheated grill to your desired doneness. Season with salt and pepper if desired. Transfer to a plate and set aside.

  5. 5

When the sauce has reduced, stir in the remaining can of beef broth, garlic, and thyme. Return to a boil, and continue cooking for 5 to 10 minutes; the sauce will be thin like au jus.

  6. 6

Whisk in the flour, and cook until the sauce reaches the desired thickness. Taste and adjust the seasoning if needed. Stir in the mushrooms. Serve the tips with the mushroom sauce spooned over.
