    Put the eggs in a saucepan and cover them with cold salted water. Bring to a boil, then lower the heat and simmer until hard-cooked, 10 to 12 minutes. Drain and cool in an ice bath. Once cool, peel the hard boiled eggs. Slice the eggs in half lengthwise and scoop out the yolks.

    Mash the yolks with vinegar, mayonnaise, mustard, salt, and pepper until smooth. You may need to add more mayonnaise to hold the mixture together, but it should be slightly dry.

    Gently spoon the egg yolk mixture back into the egg whites without packing it down. There will be enough mixture to overfill the whites. Sprinkle with paprika. Refrigerate until ready to serve.
