Turkish Kebabs

Turkish Kebabs pair thinly sliced, broiled beef with a bright lemon-oregano marinade that turns crisp at the edges while staying tender inside. Tucked into warm pitas with a tangy dill-garlic tzatziki and fresh veggies, they’re savory, zesty, and perfect for a casual weeknight dinner or laid-back weekend gathering.

  1. 1

Make marinade: Put the onions in a large ceramic bowl and crush them with the bottom of a glass until they release their juice and turn translucent. Stir in the garlic, olive oil, lemon juice, oregano, black pepper, turmeric, curry powder, and salt. Add the beef and toss to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 8 hours to overnight.

  2. 2

Make sauce: In a medium bowl, combine the sour cream, olive oil, lemon juice, salt, black pepper, dill, and garlic; mix until well combined. Cover the bowl with plastic wrap and refrigerate for 8 hours to overnight.

  3. 3

Preheat the oven broiler and position the oven rack about 6 inches from the heat source.

  4. 4

Remove the meat from the marinade, brushing off excess onions; discard the marinade. Spread the meat on a baking sheet without overlapping. Season with salt.

  5. 5

Broil under the preheated broiler until the meat is browned and crispy, about 3 minutes per side, turning halfway through.

  6. 6

Divide the meat among pita breads and drizzle with tzatziki sauce to serve.
