Hearty Whole Wheat Bagels

Hearty Whole Wheat Bagels offer a pleasantly chewy bite with a malty sweetness from honey and the nutty depth of whole wheat flour.     Add the water, honey, vital wheat gluten, salt, yeast, and whole wheat flour to the bread maker in that order. Choose the "Dough" setting. Let the machine run, about 2 hours.

    Take the finished dough out of the bread maker and punch it down on a lightly floured surface. Divide the dough into 8 equal pieces and shape them into balls. Press a thumb through the center of each ball to form a hole; shape the bagels as round as you can. Set them on a plate, cover with a clean towel, and let rest for 15 minutes.

    Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a clean towel. Sprinkle cornmeal on a separate baking sheet.

    Bring a large pot of water to a boil; stir in the sugar. Add the bagels to the boiling water, 2 at a time. Boil for 1 minute, flipping them halfway through. Lift the bagels out with a slotted spoon and drain on the towel-lined baking sheet.

    Move the bagels to the prepared baking sheet. Brush the bagels with egg white.

    Bake in the preheated oven until browned, 15 to 20 minutes. Move to a cooling rack.
