    Preheat an outdoor grill or a grill pan to medium-high heat (400 to 450 degrees F/200 to 230 degrees C) and lightly oil the grate.

    In a small bowl, stir together mayonnaise, red onion, ketchup, vinegar, capers, parsley, thyme, and sugar. Set aside.

    Using your hands, gently mix beef, 3/4 teaspoon salt, and 1/2 teaspoon black pepper in a large bowl until just combined. Shape 12 meatballs and place them on a baking sheet. Press the meatballs slightly to flatten. Drizzle with oil, then season both sides with the remaining 3/4 teaspoon salt and 1/2 teaspoon black pepper.

    Grill the patties on the preheated grill, uncovered, for 3 minutes. Flip them; place 1 quartered piece cheese on each patty. Continue grilling, uncovered, until the cheese melts and the beef is cooked through, about 2 minutes. Grill the buns, cut sides down, until toasted, about 1 minute.

    Spread a small spoonful of the sauce on the bun bottoms; add 1 patty, shredded lettuce, tomato slices, cornichon slices, and the top bun to each.
