Chopped Cheese Sandwich

    Place the mustard, ketchup, and cherry peppers in a food processor bowl. Pulse until smooth, then set aside.

    Melt the butter in a small skillet over medium-high heat. Add the onions and cook until they are soft and beginning to caramelize, about 5 minutes. Remove from the heat and set aside.

    Shape the beef into two patties and season with salt and pepper. Heat a large cast iron skillet over medium-high heat. Add the hamburger patties and cook for 5 minutes, or until a crust forms on the bottom. Flip the patties and cook for 3 minutes.

    With a wide spatula, break the patties into large pieces. Sprinkle the sautéed onion into the gaps between the hamburger pieces. Layer the cheese over the beef, and cook for 2 minutes, or until the cheese has melted.

    Spread the reserved mustard sauce on the bottom bun of each hoagie roll. Divide the meat mixture between the two sandwiches. Top each with shredded lettuce and sliced tomato.
