Zoodle Medley with Summer Veggies and Sweet Pepper Chicken Sausage
  1. 1

Bring a pot of lightly salted water to a boil. Cook the zucchini noodles (zoodles) in the boiling water until tender but still slightly firm, about 3 minutes; drain.

  2. 2

Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir the green bell pepper, the onion, 1 tablespoon seasoned salt, and sea salt for 3 minutes. Add the chicken sausage and cook until the sausage is lightly browned, 4 to 5 minutes. Add the spinach, basil, and garlic paste; season with seasoned salt. Cook until the spinach is wilted, 2 to 3 minutes.

  3. 3

Toss the zoodles with the remaining 1 tablespoon olive oil on a serving plate; season with sea salt. Add the sausage mixture and the tomatoes; top with Parmesan cheese and season with salt and black pepper.
