    Make the sauce: In a medium bowl, whisk together the ketchup, soy sauce, brown sugar, sherry, Worcestershire sauce, and garlic until the sugar dissolves. Set the sauce aside.

    Preheat an air fryer to 350 degrees F (175 degrees C).

    Prepare the pork chops: Place the pork chops on a clean work surface; season with salt and pepper.

    Beat the eggs in a flat dish. Put the bread crumbs in a separate flat dish.

    Dip one pork chop into the beaten eggs, then dredge in the bread crumbs. Dip it again in the eggs, then press into the bread crumbs to coat thoroughly. Repeat with the remaining pork chops.

    Place the pork chops in the basket of the preheated air fryer and spray the tops with nonstick cooking spray. Air-fry for 10 minutes. Flip the chops with a spatula and spray the tops again with nonstick cooking spray. Air-fry for 10 more minutes. An instant-read thermometer inserted into the center of the pork chops should read 145 degrees F (63 degrees C).
