Melt the butter in a skillet over medium heat. Cook and stir the onion in the hot butter until softened, about 5 minutes. Stir in the spinach and nutmeg; cook, stirring occasionally, for about 3 minutes.

Whisk the cornstarch into the remaining 1/4 cup tomato juice, then add it to the skillet. Reduce the heat and simmer, stirring, until the sauce thickens slightly.
