Oven-Baked Chicken Burgers with Mushrooms and Spinach

Oven-Baked Chicken Burgers with Mushrooms and Spinach are tender and juicy, thanks to finely chopped mushrooms and leafy spinach folded into lean ground chicken. A touch of roasted chicken base deepens the flavor, while baking keeps the patties moist and consistent. Serve these on soft sandwich buns for a lighter weeknight dinner or a casual weekend meal everyone can enjoy.

Oven-Baked Chicken Burgers with Mushrooms and Spinach
  1. 1

Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking pan with 1/2 of the avocado oil.

  2. 2

Combine the mushrooms, spinach, onion, and garlic in a small food processor or blender and pulse several times until finely chopped but not pureed.

  3. 3

Place the ground chicken in a bowl. Add the chopped vegetables, chicken base, salt, and pepper. Mix until the vegetable pieces are evenly distributed. Divide the mixture into 5 equal portions and shape into patties.

  4. 4

Set the patties on the prepared baking sheet and lightly brush them with the remaining avocado oil.

  5. 5

Bake in the preheated oven for about 20 minutes. Turn on the broiler and broil each side until browned, 1 to 2 minutes per side. An instant-read thermometer inserted in the center should register at least 165 degrees F (74 degrees C).

  6. 6

Place each chicken burger on a bun.
