Silky Beet Purée with Orange and Ginger

    Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with a large piece of aluminum foil.

    Spread the beets on the baking sheet with the garlic and ginger. Sprinkle with the coriander and salt, drizzle with the oil, then cover with another sheet of aluminum foil and crimp the edges to make a sealed packet.

    Bake in the preheated oven until the beets are tender enough to pierce with a knife, about 30 minutes. Remove from the oven and let the beets steam in the foil packet for 10 minutes.

    Unwrap the packet and move the beets, garlic, ginger, and any juices to a food processor. Purée with the orange zest, orange juice, and vinegar until nearly smooth with just small lumps, then add the butter and purée until blended.
