Orange Pear Butter

Orange Pear Butter blends ripe pears with bright citrus, warm spices, and vanilla into a smooth, spreadable preserve. Orange Pear Butter

    Combine the pears and orange juice in a large Dutch oven. Stir in the orange zest, cinnamon, nutmeg, cardamom, and the vanilla bean seeds. Bring to a boil. Cover, reduce the heat, and simmer until the pears are tender.

    Puree the pears in a food processor or with a food mill. Return the pear puree to the Dutch oven. Stir in the sugar until it dissolves. Cook and stir over medium heat, uncovered, until thickened.

    Inspect 10 pint jars for cracks and the rings for rust, discarding any defective ones. Keep them immersed in simmering water until the pear butter is ready. Wash the new, unused lids and rings in warm, soapy water.

    Pack the pear butter into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the inside of the jars to release any air bubbles. Wipe the rims with a moist paper towel to remove any residue. Cover with metal lids and screw on the rings.

    Place a rack in the bottom of a large stockpot and fill it halfway with water. Bring to a boil and lower the jars, spaced 2 inches apart, into the boiling water using a holder. Add more boiling water to cover the jars by at least 1 inch. Bring to a rolling boil, cover, and process.

    Remove the jars from the stockpot and let them rest, several inches apart. Press the center of each lid with a finger to confirm the lid does not move up or down. Remove the rings for storage and store in a cool, dark place.
