    Build a campfire and let it burn until a bed of coals forms. Rake the coals into a flat layer on one side of the fire.

    Combine the chicken, onion, mushrooms, peppers, garlic, and potatoes in a large bowl or a large resealable plastic bag. Add the olive oil and lemon juice and toss to coat.

    Divide the mixture evenly among 4 large sheets of aluminum foil. Place another sheet of foil on top of each and roll the edges tightly. Wrap each packet a second time with another sheet of foil.

    Cook over the preheated coals until the chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).
