Assemble all ingredients and preheat the oven to 250 degrees F (120 degrees C).

Slice the ribs, pork shoulder, tenderloin, pork belly, and pork sirloin in half.

In a small bowl, use a spoon to mix the kosher salt, brown sugar, smoked salt, smoked paprika, black pepper, cumin, garlic powder, onion powder, and cayenne to make the dry rub.

Season both sides of the meat cuts with the dry rub; set aside about 4 teaspoons of the rub to season the cooked pork later if needed after tasting.

Lay a sheet of heavy-duty foil on a sheet pan. Place one half of the ribs in the center of the foil; layer the shoulder, tenderloin, pork belly, and sirloin on top. Place the other rib half on top.
