Chef John's Rocky Road

Chef John's Rocky Road layers rich dark chocolate with pillowy marshmallows and crunchy salted almonds for a satisfying mix of textures. A final dusting of cocoa reins in the sweetness and adds a refined, candy-shop finish. Perfect for holidays or make-ahead treats, it slices cleanly into bite-size squares with deep chocolate flavor and a toasty nut crunch.

  1. 1

Place dark chocolate chips, butter, and maple syrup in a heat-safe bowl set over a saucepan with about 1 inch of hot water on the lowest heat until melted; do not stir.

  2. 2

Meanwhile, line an 8x8-inch baking pan with plastic wrap.

  3. 3

Slowly stir the melted chocolate mixture with a spatula until glossy and smooth. Remove from heat, then stir in the marshmallows and almonds until combined.

  4. 4

Quickly transfer the mixture to the prepared pan and spread it evenly. Do not smooth or press down the top; try to keep a rough texture. Cool to room temperature, about 30 minutes. Wrap in plastic wrap. Refrigerate until firm and well chilled, about 2 hours.

  5. 5

Sift cocoa over the top. Cut into 16 squares.
