    Place the chicken, breadcrumbs, dry mustard, black pepper, cayenne, soy sauce, Worcestershire sauce, egg, and ketchup in the bowl of a food processor. Pulse on and off until the mixture is coarsely but evenly ground. Transfer to a bowl and press down firmly with the back of a spatula. Cover and refrigerate for 20 to 30 minutes.

    With damp hands, shape the chicken mixture into 4 oval patties about 1/2-inch thick. Season both sides generously with salt.

    Melt the butter with the oil in a large skillet over medium-high heat. When the butter stops foaming, add the patties and brown them on both sides for about 3 to 4 minutes. Turn off the heat, then transfer the patties to a plate and set aside.

    For the sauce, turn the heat back to medium-high and add the mushrooms with a pinch of salt. Cook, stirring, until the mushrooms are nicely browned. Add the green onions and cook, stirring, until they just begin to soften, about 2 minutes. Stir in the flour and cook for 2 minutes.

    Stir in the broth and let the sauce come to a simmer, stirring occasionally. Stir in the ketchup, Worcestershire sauce, and lemon juice. Cook the sauce until reduced and thickened to your liking, about 4 minutes. Reduce the heat to medium-low and return the chicken patties to the pan.

    Cook, basting often, until the chicken is heated through, about 4 minutes. An instant-read thermometer inserted near the center should register 165 degrees F (74 degrees C).
