  1. 1

In a large bowl, combine bread crumbs, onion, egg, parsley, Worcestershire sauce, and garlic. Stir well, then add the beef and pork. Mix gently and shape into 8 equal portions. Set the patties on a plate, cover with plastic wrap, and refrigerate for 1 hour. Take them out of the refrigerator 30 minutes before cooking.

  2. 2

Turn on a multi-functional pressure cooker (such as an Instant Pot) and choose the Sauté function. Add oil. Add the patties in batches so the pot is not overcrowded. Sauté for 2 minutes per side. Move the cooked patties to a plate. Add onions to the pot and cook until browned, about 2 minutes. Add mushrooms and cook for 2 minutes more.

  3. 3

Pour the wine into the pot and stir, scraping up all the browned bits from the bottom. Add the broth, tomato paste, salt, and pepper; stir well. Return the cooked patties and any accumulated juices to the pot and turn to coat.

  4. 4

Close and lock the lid. Select high pressure according to the manufacturer's instructions; set the timer for 15 minutes. Allow 10 to 15 minutes for the pressure to build.

  5. 5

Release the pressure using the natural-release method per the manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

  6. 6

In a bowl, combine 4 tablespoons broth with cornstarch and stir until dissolved. Slowly add this mixture to the pot while stirring constantly. Select the Sauté function; cook until thickened, about 5 minutes.
