Chicken Tostadas

Chicken Tostadas

    Preheat the oven to 375 degrees F (190 degrees C).

    Place the chicken in a frying pan over medium heat. Sprinkle it with taco seasoning and cook until it is no longer pink in the center and the juices run clear, 5 to 7 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).

    Spread a thin layer of refried beans on each tostada shell; sprinkle each with Mexican cheese. Divide the cooked chicken over the cheese layer. Evenly sprinkle tomato, red onion, and bell pepper on each tostada. Set the tostadas on a baking sheet.

    Bake in the preheated oven until crispy, 10 to 15 minutes.
