Chicken with Gnocchi
Pan-seared chicken meets crisp, buttery gnocchi and tender spinach layered over smoky bacon and sweet onions, all tied together with a tangy tomato–balsamic glaze. Place the bacon and onion in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Set aside.

Heat oil in a pan over medium heat. Add the chicken and 1/2 of the lemon juice, and cook until the centers are no longer pink and the juices run clear, 5 to 7 minutes per side.

Meanwhile, combine balsamic vinegar, brown sugar, rosemary, red pepper flakes, and the remaining lemon juice in a saucepan and bring to a boil. Reduce the heat to medium-low and simmer until the mixture bubbles, 5 to 7 minutes. Add the tomatoes with some of their juice and continue simmering while the chicken finishes cooking.

Melt the butter in a pan over medium heat. Pan-fry the gnocchi in the hot butter until golden brown, 5 to 7 minutes.

Set a steamer insert into a saucepan and add water to just below the bottom of the steamer. Bring the water to a boil. Add the spinach, cover, and steam until tender, 2 to 6 minutes.

Arrange the bacon and onion on a serving plate and layer the spinach, gnocchi, and chicken on top, in that order. Drizzle with the tomato-balsamic sauce.
