Christmas Lefse

Christmas Lefse features tender, ultra-thin Norwegian potato flatbreads made from chilled mashed potatoes, rolled delicately, and cooked until lightly speckled. Soft and pliable with a gentle potato richness, they’re perfect warm or at room temperature with butter and a dusting of white or brown sugar—ideal for holiday snacking or festive brunch spreads.

  1. 1

Place the potatoes and salt in a pot and add enough water to cover. Bring to a boil and cook until the potatoes are easily pierced with a fork. Drain and transfer to a large bowl. Add the butter and cream and mash until perfectly smooth. Cover and refrigerate overnight.

  2. 2

Use your hands to form the potato mixture into four even logs about 6 inches long. Cut each log into 4 or 5 pieces. Using only enough flour to prevent sticking, roll each piece out as thin as possible. Flip the dough often and sprinkle on more flour as needed. Be careful not to add too much flour, as it can make the lefse tough.

  3. 3

Heat a lefse grill or griddle over medium heat. Cook one at a time until the lefse are golden brown with darker brown bubbles on each side, flipping once. Use a flat lefse turner if available. Stack the cooked lefse on a plate or tray and cover with a tea towel to prevent drying. Once completely cool, wrap in plastic to keep it moist.

How easyChef Pro Scores This Recipe

easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.

The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.

Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.

Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
