Bring a large pot of salted water to a boil and cook the pasta until slightly firm, 9 to 11 minutes. Reserve 1 cup of the pasta water, then drain the pasta.

Meanwhile, heat a skillet over medium heat, add olive oil, then add the sausage. Cook the sausage, breaking it up with a spatula until it begins to brown, about 7 minutes.

Add the garlic, and add a little more olive oil if the skillet looks dry. Pour in the wine and use a spoon to scrape up the browned bits from the bottom of the skillet.

Simmer until the wine has reduced by about half; add the pasta water and half of the Parmesan. Stir, then add the cream. Stir again, season with salt and pepper. Let it cook for a minute, then stir in the pasta. Check the seasoning, then add the remaining Parmesan. Stir well and serve sprinkled with parsley.
