Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper and set it aside.

Combine 8 cups water and baking soda in a large pot and bring it to a rolling boil over high heat. When it boils, reduce the heat and keep the water at a simmer.

Starting at the wide end, roll each crescent roll triangle into a long rope, about 12 inches. Shape the rope into a pretzel.

With a spider strainer, lower 1 pretzel at a time into the simmering water for 7 to 8 seconds. Set the pretzels on the parchment-lined baking sheet. Mix the egg and 1 tablespoon water in a small bowl. Brush each pretzel with the egg mixture.
