    Make tacos: Cut the fillets into 2-ounce portions. Season with 1 teaspoon salt, dried cilantro, cumin, and oregano. Let rest while you combine the flour, cornstarch, cayenne, and the remaining 1 teaspoon salt in a shallow dish.
