- 1
In a large bowl, combine 5 tablespoons warm water, the yeast, and the sugar. Let it sit until creamy, about 10 minutes.
- 2
Add the flour and 1/4 teaspoon salt to the yeast mixture; stir thoroughly to combine. If needed, stir in 1 tablespoon additional water at a time until all the flour is absorbed and the mixture comes together into a dough. Turn the dough out onto a lightly floured surface and knead until springy, 4 to 6 minutes.
- 3
Lightly oil a large bowl. Place the dough in the bowl and turn it to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in size, about 30 minutes.
- 4
Preheat the oven to 465 degrees F (240 degrees C). Lightly grease a baking sheet.
- 5
Deflate the dough and turn it out onto a lightly floured surface. Knead briefly, then pat or roll the dough into a sheet and transfer it to the prepared baking sheet. Brush with the remaining oil and use your fingertips to make dimples all over the surface. Sprinkle with rosemary leave and extra salt to taste.

Bake in the preheated oven to your preferred crispness, about 10 minutes for a light and fluffy result or about 20 minutes for a crunchier, darker exterior.
