    In a medium bowl, combine warm water, yeast, and sugar. Stir, then let stand for 5 minutes, or until fully bloomed.

    Add flour, olive oil, salt, Cheddar cheese, and Parmesan cheese to the yeast mixture. Mix to make a shaggy dough.

    Turn the dough out onto a clean work surface. Knead for 4 to 5 minutes, or until the ingredients are incorporated and the dough forms a smooth, shiny ball.
