Rosemary Dijon Prime Rib

    Preheat the oven to 450 degrees F (230 degrees C).

    Make small cuts all over the roast. Insert garlic slices into the cuts. Generously salt the entire roast. Spread a thin layer of Dijon mustard over the whole roast. Generously sprinkle the mustard layer with rosemary leaves. Set the roast bone-side down in a roasting pan.

    Bake in the preheated oven for 30 minutes. Lower the oven temperature to 350 degrees F (175 degrees C). Insert a meat thermometer into the thickest part of the meat, avoiding the bone. Continue cooking to your preferred doneness, or until the meat reaches 145 degrees F (65 degrees C) for medium, about 1 1/2 hours. Remove from the oven, cover with a doubled sheet of aluminum foil, and let it rest in a warm spot for 10 to 15 minutes before slicing.
