    Cover loosely with plastic wrap and refrigerate for 8 hours to overnight.

    Allow the roast to come to room temperature, about 1 to 2 hours.

    Preheat the oven to 200 degrees F (95 degrees C).

    In a small bowl, combine the butter, rosemary, thyme, and black pepper.

    Spread the butter mixture over the roast. Place the roast in a large roasting pan.
