  1. 1

Heat water in a large pot over high heat. Add salt and stir until dissolved. Stir in brown sugar, orange, lemon, lime, cilantro, garlic, rosemary, thyme, bay leaves, peppercorns, fennel, coriander, and cloves. Bring to a boil, then lower the heat to low and cover. Simmer the brine for 20 minutes.

  2. 2

Fill a sink with ice water. Take the brine off the heat and set the pot in the sink. Stir until the brine cools to room temperature. Transfer to a large plastic or glass container such as a 12-quart Cambro. Add the pork tenderloin pieces. Cover and soak for 6 hours to overnight.

  3. 3

Take the loins out of the brine and rinse. Let them sit at room temperature for 30 to 45 minutes while you prepare the grill. Preheat the grill for indirect heat to 275 degrees F (135 degrees C).

  4. 4

Set the loins on the cooler side of the preheated grill and cook, turning every 20 to 30 minutes, until an instant-read thermometer in the centers reads 130 to 135 degrees F (54 to 57 degrees C), 35 to 40 minutes.

  5. 5

Brush vegetable oil on the loins and move them to the direct heat side of the grill. Sear until golden brown all over and the internal temperature just reaches 145 degrees F (63 degrees C), about 2 minutes per side. Remove the loins from the heat, place on a serving dish, and tent with foil. Rest for about 5 minutes, then slice into 1/2- to 1-inch-thick medallions.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
