    In a large bowl, combine the shrimp, olive oil, smoked paprika, granulated garlic, salt, and pepper. Toss to coat, then let marinate for 15 minutes.

    Preheat an outdoor grill or grill pan over high heat. If using an outdoor grill, thread the shrimp onto skewers. Grill the shrimp until bright pink on the outside and the meat is opaque, 2 to 3 minutes per side, then transfer to a plate. Warm the tortillas on the grill for about 10 to 15 seconds per side.

    Chop the shrimp into 1/2-inch pieces and place them in a large bowl. Add the lettuce, croutons, and Caesar dressing. Divide the mixture down the center of each tortilla. Fold in the sides of the tortillas, then roll up tightly from the bottom. Cut the wraps in half on the diagonal and serve.
