Honey-Herb Glazed Roast Turkey

    Preheat the oven to 325 degrees F (165 degrees C).

    Rinse the turkey, then pat it very dry with paper towels. Brush the turkey with extra-virgin olive oil, inside and out.

    In a small bowl, mix 1 teaspoon salt, thyme, and 1/2 teaspoon pepper; sprinkle this evenly over the turkey. Place the turkey on a rack set in a roasting pan.

    Roast the turkey in the preheated oven for 2 hours.

    While the turkey roasts, stir together the honey, melted butter, parsley, sage, basil, the remaining 1 teaspoon salt, and the remaining 1 teaspoon pepper in a medium bowl until the glaze is smooth and well combined.

    Brush some of the glaze over the turkey. Continue roasting, basting frequently with the remaining glaze, until the bone is no longer pink and the juices run clear, about 2 more hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read at least 165 degrees F (74 degrees C).

    Remove the turkey from the oven, cover it with a doubled sheet of aluminum foil, and let it rest in a warm place before slicing, 10 to 15 minutes.
